食大閘蟹飲咩酒?(上篇)

九月圓臍十月尖,秋風起,除咗三蛇肥之外,大閘蟹一定係主角。今次唔係講點揀蟹,而係無論你食蟹公定蟹乸,有蟹無酒,相信好多老饕接受唔到!所以,今次就同大家分享吓食大閘蟹配咩酒。
首先,經典配搭,一定係花雕。花雕,喺黃酒的類別入面屬於半乾型(簡單D,即係微甜),係紹興酒的一種(女兒紅、狀元紅其實都係紹興酒),不過就係最頂級的種類,越陳越香。高年份的花雕酒,色澤呈深紅黃色,晶瑩剔透,酒香芬芳,酒體醇厚,餘味悠長。老實講,對花雕小弟認識唔深,配大閘蟹的話,如果有酒友一齊分享,我會去天香樓買。一斤裝(大概係一個啤酒樽咁多) $400左右。天香樓的花雕據稱係用30年左右的老酒去兌5年的新酒,配大閘蟹真係一流,相得益彰得嚟,又可以驅寒。
除咗中國黃酒,法國黃酒係另一個選擇。我無寫錯,你無睇錯,就係法國黃酒 Vin Jaune (法文意思係 yellow wine)。呢一種酒係產自法國東部的Jura 入面的 Chateau-Chalon區( 呢個係法定產區(AOC)名, 唔係酒莊名),用當地的Savagnin 葡萄造的酒。佢特別的地方係會喺228升的酒桶靜置最少五年,而桶入面會留返一定的空間,比一層酵母生長出嚟。由於喺酵母未生長之前,酒會被氧化,而酵母生長出嚟之後,氧化停止,但酵母又會令酒的風味產生變化,最後的成品就會帶有蜜糖、發酵、杏仁、乾杏甫、鹹香、咖喱等等的風味。鹹甜交雜,又層次豐富的Jura Vin Juane,同又叫五味蟹的大閘蟹係好襯的。
飲開酒的朋友就會發現,Vin Jaune的造法同另一種酒好相似,就係西班牙的雪莉酒(Sherry)。雪莉酒有唔同的種類,配大閘蟹就會用乾型的雪莉— Fino 或者係Oloroso。雪莉酒必須喺西班牙的Jerez 區出產,可以用的葡萄品種有三種,而其中的Palomino 就會用做乾型雪莉酒。Fino 同上面講的Vin Jaune好相似,佢獨特的風味主要係來自氧化同埋酵母菌。Fino 的酒體輕盈,有豐富的杏仁、香草、麵粉團(發酵味道)、鹹香味。Oloroso 係深啡色而且酒精度較高度(17%-22%)的酒,因為造酒的時候只有少量或者無酵母層的形成,氧化帶來的風味十分突出,有拖肥、香料、合桃同皮革味。Oloroso 比Fino 有更佳的複雜性,可以話更似花雕的味道,所以相對地更可以配襯到大閘蟹。
