點解香檳(Champagne)賣咁貴?

香檳(Champagne),可以話係聞名世界的法國氣泡酒,而且只係由法國香檳區(Champagne) 出產的氣泡酒先可以叫香檳,其他法國出產的氣泡酒(當然係指用返造香檳方法Traditional Method造的氣泡酒的法定產區(AOC) 啦)只能夠係Cremant。Cremant 有8個法定產區例如 Cremant de Alsace、Cremant de Bordeaux、Cremant de Bourgogne...等等。
其實香檳矜貴的地方在於佢的生產過程所需要的時間同工序,因為從採收去到最後製成香檳,要經過兩次發酵同埋好多唔同的工序。大家可以睇睇下面幅圖。

香檳基酒釀成之後,香檳廠會進行混酒,因為一般香檳都係無年份(Non Vintage, NV) 的,呢個方法亦可以令到同一個牌子出產的香檳口味一致,當然有年份(Vintage) 香檳除外啦。
成個釀製過程入面,會有兩種添加物,第一種就係酵母混合物(liquer de tirage)。酵母混合物其實係糖、酵母、酒、酵母營養素......等等的混合劑,係用嚟令到基酒產生二氧化碳,即係酒入面的氣泡。另外,根據香檳區的法例規定,香檳最少要陳存15個月而其中12個月要同酵母一齊在樽入面陳存。所以,香檳有特別的餅乾、麵包同多士香味,就係從呢D 酵母菌經過一段時間(最少約需要10個月)自我分解(autolysis)之後所形成的。大家可以想像到,酵母混合物的成分組合,對香檳的味道有重大影響。
加入酵母混合物之後的酒唔係就咁放喺度,而係要定時咁將佢轉唔同的角度,慢慢咁將沉積物(即係之前的酵母等的物質)推向樽口,為後面除渣(Disgorgement) 做準備,呢個過程叫轉瓶(Riddling)。傳統嚟講,係一個人手工序,但依家漸漸被機器取代。
經過一定時間之後(即係最少12個月),香檳廠會決定幾時做除渣(Disgorgement)。除渣的做法係將已經聚集在樽口的沉積物凍結成一舊,然後開瓶,因為樽入面的二氧化碳積存咗一段時間,形成向外推的力量,就可以將沉積物推走。第二種的添加物在呢個時候出場 -- 酒糖混合物(liquer d’expedition)。酒糖混合物的成分係酒同蔗糖,佢的甜度最主要係用嚟平衡返香檳的酸,亦都會決定呢支香檳最終會係咩種類。雖然一般香檳都唔係甜的,但其實會有甜的香檳,例如Extra-Sec、Sec去到最甜的Doux。
經過咁多重工序同埋長時間的處理,先可以造到一支真正的香檳出嚟,咁大家就知點解香檳的價錢會比較貴。當然,另一個原因就係香檳的市場定位。佢哋一早就將自己定位為開心、快樂、喜慶同高貴的酒,所有的宣傳同品牌策略都係走貴價路線,呢個又係另一個香檳價格長期高企的原因。
